My Elderberry Frenzy

If you are even acutely aware of what is going on with trends in our world, then you have likely heard of elderberries.
Some people claim that these berries have some great benefits, while others wonder if it is just another hype. But researchers are discovering that may have flu-fighting capabilities that may far exceed the power of that trusty ol’ flu shot. In fact, an article published by the University of Sydney finds that “Compounds from elderberries can directly inhibit the virus’s entry and replication in human cells, and can help strengthen a person’s immune response to the virus”
To be honest, with lifelong memories of always going to the doctor with signs of a cold and walking away with that pink, bubblegum-tasting amoxicillin as a kid or a Z-pack as I got older, I just wonder if I have done more harm than good. 
The more I continue to learn about how things are made and developed, whether food or medicine, the leerier I am of consuming it. And with potentially more unsettling proposed legislation/changes in the works, perhaps it is time to really start doing things differently.
About a year ago, a friend of mine introduced me to the little elderberry. And I have been obsessed ever since.
So what are the benefits of taking elderberry?
It is rumored that taking it once daily can keep your immune system boosted, but when you are actively fighting something, you should increase that dose. Keep in mind, however, that I am not a doctor or a medical professional – which means you should not dose your meds based on my blog post. Got it? Ok, then, back to the benefits.
Elderberry has been shown to – 
✔ Protect you from the flu. 
✔ Make your skin beautiful from the inside out.
✔ Reduce the length and severity of the common cold. 
✔ Boost your immune system. 
✔ Have antidepressant capabilities. 
✔ Help manage diabetes. 
✔ Reduce inflammation within the body. 
✔ Act as a diuretic, naturally.

I live in a very full house. So, when a germ comes home from school, it generally makes its way around the table. Not always, but quite often. Ever since I was enlightened on these scrumptious berries, I have made changes in the way that I respond to those illnesses. So far, so very good.

But it made me think – if we are taking elderberry syrup to avoid Big Pharma, then why would we purchase the elderberry syrup at, say, Walmart? Why not make it pure, at home, with the necessary ingredients and nothing else?

And, so I did.

My local farmers market has started selling these organic kits created by a woman in our area. For $18.00, they say it makes over 16 ounces. Considering the store-bought stuff is $9.72 for 4 ounces, I figured it was a slam dunk. Everything about this just seemed better.
Following the instructions, I boiled water and then added the dried elderberries.
Then, I had to let it simmer for 20 minutes or so.
Strained it. This is what was left, the contents of the package.
After cooling, I added some local honey. This stuff is the BEST honey I have ever tasted.
Poured it in my glass jar and – voila! We’ve got homemade organic elderberry syrup that will last us a couple of months.

All in all, it ended up making closer to 20 ounces – and it tastes delicious.
